Impossible Pie

½ cup S/R flour.
2 ½ cups milk.
4 eggs.
125 g melted butter.
2 teaspoon vanilla essence.
1 cup coconut.
1 cup sugar.


Mix all ingredients together.
Pour mixture in 28cm frypan, cover with lid- vent open.
Cook for about 35 minutes on low to medium heat.
The mixture separates as it cooks into a base, filling and topping.
Serve warm or chilled with fresh strawberries.
