Monterey Pikelets

Monterey Pikelets

4 eggs.
2 cups S/R flour.
1 ½ cups milk.
1 tablespoon of oil.
salt & pepper.

Mix batter 1 hour before using.

300 gm fresh ricotta.
½ cup shredded mozzarella cheese.
½ cup chopped ham.
½ cup chopped parsley.
½ cup parmesan cheese grated.
salt & pepper.


Preheat fry pan or skillet to a medium heat.
Place large tablespoon of batter in the middle.
Place one teaspoon of filling in middle of batter.
Turn over and cook until brown.
Serve on a bed of shredded lettuce.
