Strawberry Mousse
Ingredients:
500g Strawberries
3 1/2 cups of whipping cream
250g caster sugar
Method:
Wash strawberries, de-stalk and blend to a fine puree in a food processor.
Whip cream, add sugar and fold in the puree.
Put in individual glasses and refrigerate for up to 6 hours.
Garnish each glass with a strawberry.
Dust with icing sugar & serve.
Variation:
Substitute Strawberries for Raspberries or Blackberries.
