Basil & Lime Syrup

Ingredients:
(Makes ~1 cup)
3/4 cup sugar.
Zest of 1 lime, removed in strips with a vegetable peeler.
1/2 cup fresh lime juice.
1/4 cup water.
1 cup loosely packed fresh basil.
Method:
Bring sugar, zest, juice, & water to a boil, stirring until sugar is dissolved.
Remove from heat allowing the syrup to stand, uncovered for 15 minutes.
Discard zest & transfer syrup to a blender.
Add basil & blend for about 20 seconds.
Pour through a fine sieve into a bowl then cool.
Notes:
Use syrup in fruit salads or to flavor drinks.
Syrup keeps, covered & chilled, 2 days.
