Chicken & Pumpkin Rollups

3 large thigh fillets (boneless Maryland).
3 fairly large pieces of Pumpkin (steamed).
1 tablespoon parsley-- chopped (mixed with following cheese, bread crumbs, rosemary, oregano and garlic).
1 tablespoon parmesan cheese -- grated.
1 tablespoon bread crumbs.
Rosemary & oregano to taste.
1 clove garlic crushed.
3 large slices of ham.
3 mushrooms chopped.
½ cup cream.
Flour to coat.


Pound flat the fillet, place a slice of ham onto chicken fillet and spread parsley and cheese mixture.
Place a piece of pumpkin and roll up. Secure with a skewer.
Dredge with flour and place into a hot 3lt casserole base with oil and butter.
Brown all around and season with pepper and powdered stock.
Place lid on and cook on a low heat until cooked. 
Remove rolls placed them onto a platter sliced.
Reduce the juices and add sliced mushrooms and cream and pour over the roll-ups.
