General Description:

Is a bulb vegetable, the bulb is a cream / white colour.
Rounded in shape with short green stalks & feathery green leaves.
Provides an aniseed / liquorice flavour.


Selection:

Generally the smaller fennel bulbs are more tender and less stringy than larger ones. 
The bulb should be firm, clean and creamy white in colour with no brown spots, yellowing or splitting.
Avoid fennel if the stalks have started to show flowers as these are over mature.
