Also called celery root.
Knobbly brown vegetable which is the root of a celery grown specifically for its root.
Sometimes it has inedible green leaves.
Taste is like a cross between strong celery and parsley.
Size can range from an apple to a small rockmelon.


Selection:

Choose small firm celeriac with a minimum of rootlets and knobs.
Avoid those with soft spots, which signal decay.
