Extremely versatile vegetable with a large number of varieties.
Most tomatoes contain high levels of antioxidants in the form of Vitamin E.
Truss varieties are grown and usually allowed to ripen on the vine.
Select tomatoes that are blemish free, bright in colour and firm.
Ripe tomatoes will give slightly to gentle pressure.

To ripen tomatoes, place them in a paper bag containing several holes all around the bag, place tomatoes stem end up, fold the top over.
Depending on how under ripe the tomatoes are they may take one to five days to ripen. Check their progress daily.
Refrigeration helps to slow the ripening of tomatoes.
So put extra-ripe tomatoes in the fridge if you want to keep from ripening any further.
However if you want to preserve the flavour of your tomatoes it is best not to refrigerate them.
