General Description:

An entirely edible spear with a budding head.
Most common variety is bright green, in colour.
Approx 18 - 23cm in length.


Selection:

Look for rich green stalks that are firm, straight and smooth with tightly closed tips.
Avoid stems that are dull green in colour as this is an indication of old age. The stalks should not be limp or dry at the cut.

Storage & Handling Information:

Store unwashed - trim the ends and store upright in a jar containing about 2.5cm water.
