A firm globe shaped vegetable with no soft or wet areas.
Skin is red/purple in colour and usually has some white streaks.
Choose beets that are small and firm with deep red colour, unblemished skin.
Also look for beets that have their main taproot still attached.
Avoid large beetroots that have a hairy taproot.
As a beetroot grows larger and ages it develops a tough, woody centre and the tap root develops many tiny hair roots.
High in Sodium and Potassium.

If the beet has its leaves attached - trim them to approx 2 cm as soon as you get them home.
The leaves sap the moisture from the beetroot.
Put in a plastic bag and store in the refrigerator crisper drawer 7 to 10 days.
