General Description:

Solid head, round or oval in shape.
Fresh cabbage should have a generous amount of outer leaves. 
As the cabbage ages the outer leaves will be removed as they whittle.
Fairly versatile - can be used in many recipes. 


Selection:

Select compact cabbages with bright crisp leaves.
Avoid those with yellowing leaves or brown spots.

Storage & Handling Information:

Store the whole cabbage head in a plastic bag in the fridge for up to a week.
Cabbage will loose its freshness quickly once the head has been cut - so you must use cut cabbage quickly.
A rule of thumb is the older the cabbage - the stronger the odour and flavour.
