General Description:

A leafy green vegetable and although being mostly water lettuce contains valuable vitamins, minerals & antioxidants.
The more bitter lettuces and the ones with pigmented leaves contain higher nutrient levels and antioxidants

There are more than 100 types of lettuce & salad greens.


Selection:

Choose lettuce that are crisp, firm & appear fresh.
Heads should be free from damage & insects.
Avoid lettuce that has browning or discolouration.

The green outer leaves can have as much as 50 x higher levels of Vitamin C and Carotenes compared to the pale inner leaves.
