General Description:

There are two main types of parsley - flat leaf and curly leaf.
Flat leaf (also known as Italian parsley) is stronger in flavour and handles heat better.
Curly leaf has a milder flavour and will keep better.
Flat leaf parsley is a deep blue-green - curly is a lighter green.

Look for parsley with no sign of wilting or yellowing.
