An entirely edible spear with a budding head.
Produced by being grown in the dark.
If exposed to sunlight, will turn pink and then green like green asparagus.
Look for rich green stalks that are firm, straight and smooth with tightly closed tips.
Avoid stems that are dull green in colour as this is an indication of old age. The stalks should not be limp or dry at the cut.
