Skin turns from green to yellow / red when ripening.
Flesh is sweet & not as tart as most other plums. 

Select unwrinkled plums with smooth blemish free skins.
Avoid those with soft spots or discolourations.
The grayish sheen on plums is natural and does not effect the quality.
